The Full-Fat Dairy Conundrum: Rethinking Our Healthy Habits
The dairy aisle has long been a battleground for health-conscious consumers, with low-fat and non-fat options vying for space alongside their full-fat counterparts. For decades, we’ve been told that switching to low-fat dairy is the key to managing obesity and reducing cardiovascular risk.
New research from the University of Toronto challenges this conventional wisdom. A study led by Professor Harvey Anderson assigned 74 adults with overweight or obesity to one of three dietary groups: a low-dairy, calorie-restricted diet; an energy-neutral diet with three servings of dairy each day; and an unrestricted diet with three daily servings of dairy. The results were surprising: participants consuming three servings of full-fat dairy per day did not experience any significant increases in weight gain, body fat, or cholesterol levels.
The study’s findings are significant because they suggest that our focus on individual nutrients may be misplaced. Instead of looking at dairy as just a source of saturated fat, we should consider the complex interactions between its various components. This is supported by a 2016 analysis by Harvard researchers, which found that dairy fat itself was not associated with higher cardiovascular disease risk.
In fact, replacing dairy fat with polyunsaturated or vegetable fats could actually increase the risk. This raises questions about our reliance on simplistic nutritional advice and the dangers of overemphasizing individual nutrients. As Anderson points out, “the food matrix itself” – the complex interactions between protein, minerals, vitamins, carbohydrates, and fat – may be more important than previously thought.
This requires us to rethink our approach to nutritional guidance, moving beyond simplistic advice about individual nutrients and towards a more holistic understanding of how different components interact. The implications are far-reaching: it challenges the idea that we should always opt for low-fat dairy products. While they may have been marketed as a healthier alternative, our research suggests that full-fat dairy can be part of a healthy diet – provided it’s consumed in moderation and balanced with other nutrient-dense foods.
This study also has broader implications for our understanding of nutrition and health. If we’re willing to question the conventional wisdom around low-fat dairy, what else might we be getting wrong? It’s essential that we prioritize a more nuanced approach to nutritional guidance, one that takes into account the complex interactions between different nutrients and food components.
Ultimately, this research prompts us to reevaluate our assumptions about nutrition. By doing so, we may uncover new insights into the relationships between diet, health, and well-being – and perhaps even find that some of our long-held certainties are in need of revision.

While this study is certainly a welcome relief for dairy lovers, we can't forget that full-fat dairy is still not equivalent to whole food, like milk from grass-fed cows versus grain-fed ones. The quality of the milk matters, and until we start producing dairy on a more sustainable scale, some low-fat options might be a better choice for environmental reasons alone.

In fact, it's often more cost-effective and sustainable to choose whole milk over low-fat or skim options. But let's not forget about the environmental impact of this shift.
